Neyyappam

                                         Neyyappam


 ''Neyyappam is a well-known South Indian snack usually made during festival season. Being my favourite I tried it recently and my mother helped me with her incredible tips. Finally, it came out well, so everyone can try this sweet crispy dish.''

INGREDIENTS
  • Rice - 1 1/2 cup
  • Jaggery -3/4 cup
  • Maida/ All purpose flour - 2 tsp
  • Grated coconut - 1/2 cup
  • Sesame seeds - 2 tsp
  • Salt - 1/4 tsp
  • Coriander Powder - 1 Pinch
  • Oil / Ghee to fry
PREPARATION
  • I used idly rice and soaked it overnight, later grind it to thick batter.
  • Meanwhile, heat jaggery in a sauce pan adding half cup of water, stir until it becomes thick as honey.
  • Grated coconut,sesame seeds, salt,coriander powder and maida can be added to the batter.
  • Finally,jaggery is added slowly to this and stir it gently
  • Keep this batter in an oven or warm place for 6 hours and let it undergo fermentation.
  • A spoonful fermented batter can be added to the boiling oil or ghee and fry it slowly.
TIPS

You may wonder why coriander powder is used for this sweet dish, it helps in fermentation process and makes neyyappam more soft and delicious....
